One scoop of grass-fed gelatin does a lot of jobs: coffee, gummies, marshmallows, broth, dessert. All of them start with the same 90-second step. Learn it once and this jar never clumps on you again.

The 90-second bloom

Real gelatin needs one small step that instant powders skip: a quick soak in cool liquid — called blooming — before it meets anything hot. Skip it and even the finest grind can clump. Do it and it dissolves clean, every single time.

For Drinks · Coffee, Tea & Broth
  1. Sprinkle 1 tbsp evenly over 1/2 cup of cool water
  2. Wait about 90 seconds — it will hydrate and swell. That’s the bloom.
  3. Pour your hot coffee, tea, or broth over it and stir. Dissolves clean, no taste, 11g protein.

Love a latte texture? Hit it with a handheld frother after step 3 — it turns silky and rich. Drink it warm; gelatin naturally thickens as it cools.

For Desserts · Jello, Gummies & More
  1. Stir 1 tbsp into ½ cup cold water and let it stand 1 minute.
  2. Add 1½ cups hot liquid and stir until fully dissolved. Sweeten or flavor to taste.
  3. Chill 2–3 hours until set.

Quick Fixes

If something went sideways

It clumped in my hot coffee.That’s a skipped bloom, not a bad jar. Next cup: bloom first (90 seconds in cool water), then add the hot coffee. A slow sprinkle while stirring works too — never dump a whole scoop into hot liquid at once.
My drink got thick as it sat.That’s gelatin doing exactly what gelatin does — it sets as it cools. Enjoy your cup while it’s warm, or re-warm it for a few seconds and it turns silky again.
My jello or gummies didn’t set.Check the ratio first: 1 tbsp sets about 2 cups of liquid — softer desserts use a little less gelatin, gummies use much more. Fresh pineapple, kiwi, and papaya contain enzymes that stop any gelatin from setting; use cooked or canned versions instead, and give the fridge a full 2–3 hours.

The Family Favorite

Fruit Juice Gummies

Makes 100+ small gummies. Kids think they’re candy.

You need

  • 1 cup 100% fruit juice (grape, berry, or cherry)
  • 3 tbsp Neversink gelatin
  • 1–2 tbsp honey, to taste

Make it

  1. Bloom the gelatin in ¼ cup of the juice, 1 minute.
  2. Warm the rest of the juice with the honey until steaming (not boiling), stir in the bloomed gelatin until clear.
  3. Pour into molds or a small pan. Chill 30–60 minutes, pop out, done.

The Daily Ritual

Protein Coffee

Zero taste, 11g protein, and a texture people describe as luxurious.

You need

  • 1 tbsp Neversink gelatin
  • ½ cup cool water or cream
  • Your normal cup of coffee

Make it

  1. Bloom the gelatin in the cool liquid right in your mug, 90 seconds.
  2. Pour hot coffee over and stir — or froth it for a rich, creamy finish.
  3. Add your usual cream or sweetener. Drink warm.

The Weekend Project

Honey Marshmallows

Three ingredients. No corn syrup. Better than any bag from the store.

You need

  • 3 tbsp Neversink gelatin + ½ cup cool water
  • 1 cup honey + ½ cup water
  • 1 tsp vanilla, powdered sugar for dusting

Make it

  1. Bloom the gelatin in the ½ cup water in your mixer bowl.
  2. Simmer honey and water to 240°F, then slowly pour into the bowl while whipping.
  3. Whip 8–10 minutes until thick and glossy, add vanilla, spread in a lined pan, set 4+ hours, cut and dust.

Vanilla Panna Cotta

A five-minute Italian classic that looks like you fussed all day.

You need

  • 1 tbsp Neversink gelatin + 3 tbsp cool water
  • 2 cups cream (or whole milk), ⅓ cup sugar
  • 1 tsp vanilla, berries to serve

Make it

  1. Bloom the gelatin in the water, 1 minute.
  2. Warm cream and sugar until steaming, stir in the bloom and vanilla until dissolved.
  3. Pour into cups, chill 3–4 hours, top with berries.

Better Broth & Soups

You need

  • 1 tbsp Neversink gelatin per 2 cups broth, soup, or gravy
  • ½ cup cool water

Make it

  1. Bloom the gelatin in the cool water, 90 seconds.
  2. Stir into your hot soup, stew, or pan gravy until it disappears.

The Classic

Real-Fruit Jello

The one your grandmother made — juice and gelatin, nothing else.

You need

  • 1 tbsp Neversink gelatin
  • 2 cups 100% fruit juice, divided
  • Fresh fruit to suspend (optional — skip fresh pineapple or kiwi)

Make it

  1. Bloom the gelatin in ½ cup of the juice, cold, 1 minute.
  2. Heat the rest to steaming, stir into the bloom until dissolved.
  3. Add fruit if using, pour into a dish, chill 2–3 hours until set.
